Helmet, leather jacket and gloves (even in summer), boots, jeans. I one day may buy leather pants to attach to my jacket, but I don't know if I just wear my underwear or shorts underneath. If anyone wears leather pants, please advise.

Spring\Summer: shorts (sometimes jeans), tshirt, gloves, & always a helmet.
Fall\Winter: Jeans, Fieldsheer jacket w\CE armor (when it's cold I've got the pants that go with), gloves, & helmet

I have two complete sets of 2 piece sport leathers, as well as a BMW spine protector (comfy). One outfit is one size larger so that I can wear it in the colder weather with an extra layer of fleece /electrics (Air Kanetsu).
I occasionally wear an Aerostich one piece Roadcrafter suit, however, I forgot to opt for the forward-rotated shoulders option (my bad  ), and it is a bit tight in the upper arms/shoulders for XX riding. I recently purchased his/her matching sets of Olympia textile outfits for my wife and myself for summer riding (she has a set of sport leathers, too).
You can comfortably wear leathers (black ones, anyway) till about 80 degrees, as long as you are moving. Get stuck in a trafic jam, on an intensely sunny day, and you will roast/feel lightheaded, quickly!
The Olympia clothing (silver grey) is a pretty trick piece of gear and has multi season functionality engineered into it. It may not be as tough as competition leathers in a bad slide, but, the armor is in the right place and it is reinforced in critical areas.
Oxtar Matrix or Alpinestar boots, as well as quality armored gloves, round it all out. Don't forget high quality, moisture wicking undergarments and socks are important, too!

One piece Race
One Summer
One cool weather
One Rain (not vanson)
Helmet various, gloves various, and boots various.
under garmets from capilene, under armour to windbreakers...
I do not subscribe to the safety nazi MC guys who rail on those who dont wear gear. Bikes mean freedom to me. do what you want, cagers hate us regardless and even if we all wore gear our insurance rates are never going down.
I've been known to ride to the local bike haunts in shorts, sandals, tank top and sun glasses when they local web board starts their "We're better than they are cause we wear gear!" bullshit. I'm just a dick like that!

It is full gear for me. If I am commuting I trade the leather pants for jeans, not always draggins, and leave the back protector at home.

Vanson 2 piece drag race leathers or
One piece Aerostitch Roadcrafter or
BMW Airflow jacket and pants or
Heine Gerick 3/4 leather jacket and pants or
Belstaff Discovery jacket and pants or
Honda leather jacket and jeans or
Whatever golf shirt I happen to have on and Dockers.
Too many gloves to mention,
Boots are Sidi or Oxtar but sometimes work shoes, sometimes tennis shoes.
3 different Shoei helmets with my fav being my yellow 1000.
Also a BMW Klima Komfort (their spelling) rain suit if I don't have the 'stitch or the Belstaff on.
Anything over about 10 miles finds me in all the gear. It's too big a PITA and too friggin' hot most of the year to bother on my 4.4 mile urban street ride to work every day.

No I'm not kidding it helps keep it upright. Why is there something wrong with my outfit so far everybody seems to like it. It gets a little chilly above 180 mph. But when you get into a scary situation you don't have to clean your pants out. By the way should I just drive naked.
