I'd like to take apart my bike's fairing and apply a generous dousing of engine degreaser to clean her up.

Are degreasers safe to use around coolant, brake and clutch hoses? Are they safe to use around rubber parts and gaskets?

Anything in particular I should look out for when using them? Thanks.

Yep! it's safe for modern rubber parts, paint and similar things. Just be careful around around shaft seals, like the front sprocket, gear shift shaft and things like that (especially the chain). Also don't put any directly on brake pads if you can help it. Plenty of water applied immediately will dissolve any misplaced degreaser anyway. It's the only way to get things clean properly. Some swear by their chosen 'truck wash' or similar but these should be avoided because they are usually strongly alkaline to dissolve heavy road grime and therefore react with alloy, and the zinc on the fasteners.
Degreaser is good stuff. It's safe for anywhere except where grease is supposed to be.

Also if you read closely on the can most of the time it will say,
( the following quote was taken off a engine degreaser can)

"SAFE ON MOST UNDERHOOD RUBBER,
PLASTIC, AND PAINT"

If it doe's not do not buy, otherwise might take off paint & destroy rubber gasket's & seal's
