Hi Mate, Not to sure but I figure your talking about the Dyno-Jet Kits when you say the Stage 1, 2 & 3 carb kits. There are somethings to take into consideration when playing with carbs, have you done a airbox mod (K&N or similar air filter), an aftermarket pipe ect. You should run it on a Dyno to see how it running. I've done the airbox and the pipes and we ran it on the Dyno and my mechanics drilled out the two outside jets with a 1mm drill bit and moved them to the two inside positions and moved the two inside jets to the two outside positions, if that makes sence. Now instead of that flat spot at around 5000-7000 rpm if my memory serves me, it's gone and it pulls all the way through the rev range. I'd talk to someone who knows what their talking about before you play with the carbs, you may make it run to rich or to lean and loose power altogether.
Good Luck with it and let us know how you get on. WOL

Here's a link that you may find worth a read before purchase of a Jet kit. I'll be going with "Factory Pro" when the time comes (shortly after the TiForce pipe is installed).

Recommended Carb Settings...
